Treat yourself to something hearty this Halloween! This savory pumpkin turkey chili is a cozy, protein-packed meal bursting with fall flavor. Pumpkin adds fiber, vitamins and a creamy texture that makes every bite feel like comfort in a bowl.

Ingredients

1 tablespoon olive oil
1 pound lean ground turkey
1 (28-ounce) can diced tomatoes
2 cups cubed fresh pumpkin (peeled and seeded)
1 (15-ounce) can chili beans, drained
1 (15-ounce) can seasoned black beans, drained
1 onion, chopped
2–3 tablespoons brown sugar (for a touch of sweetness)
1 tablespoon pumpkin pie spice
1 tablespoon chili powder

Directions

  1. Heat olive oil in a large soup pot over medium heat. Add ground turkey and cook, stirring often, until browned and no longer pink, about 10 minutes. Drain any excess fat.
  2. Transfer the turkey to a slow cooker. Stir in diced tomatoes, pumpkin, beans, onion, brown sugar, pumpkin pie spice, and chili powder.
  3. Cover and cook onLow for at least 3 hours, until the pumpkin is tender and starts to break apart.
  4. Serve warm and enjoy this festive, nourishing twist on a classic chili!

🕸️ Healthy Eating Tip:

Don’t throw away those pumpkin seeds just yet! While your chili cooks, roast them in the oven for a crunchy, heart-healthy snack. Toss with olive oil and a dash of seasoning, then bake at 325°F for 15–25 minutes until golden and crisp.
